Yum Yum FOOD!

Hey guys!

I wanted to share the most amazing chocolate cupcake recipe I have ever had, and the best buttercream frosting that goes amazingly with it. I can't remember where I got the chocolate cake recipe so I'm sorry. I got the frosting recipe from here. This is a pretty stinking awesome blog too. Check her out. Here are Le Recipes!

Chocolate Cupcakes

  • 1 1/2c Flour
  • 1c Granulated Sugar
  • 1tsp Baking Soda
  • 1tsp Salt
  • 2/3c Cocoa Powder
  • 1/2c Oil
  • 1c Water
  • 1tsp Vanilla Extract
  • 1Tbsp Vinegar
Directions:
  1. Mix all ingredients together until moist and well blended.
  2. Put in cupcake cups and bake for 20-25 minutes at 350 degrees F.
  3. Frost with your favorite icing. (The following icing does wonders. Or maybe a nice peanut butter frosting. YUM!)
  4. To make a layer cake, double the recipes and put in 2 round cake pans.
  5. Increase baking time to about 35 minutes or until a toothpick inserted in the center comes out clean.

Cream Cheese Swiss Meringue Buttercream
  • 3 Egg Whites
  • 2/3c Sugar
  • 10Tbsp Butter, cubed and at room temp.
  • 1tsp Vanilla Extract
  • 4oz. Cream Cheese, cubed and at room temp.
Directions:

In the base of a double boiler, bring water to a simmer. In the top bowl (or just a bowl to place over a pan of simmering water) combine the egg whites and sugar and whisk constantly until the mixture is hot to the touch (160F on a candy thermometer if you want to be completely accurate), about five minutes depending on the original temperature of the eggs. When the mixture has warmed sufficiently, pour it into the bowl of your stand mixer and whip on high speed until the bottom of the bowl is room temperature, ten to fifteen minutes. When the bowl is no longer warm, turn the mixer to medium-low and begin adding the butter piece by piece. Let each chunk incorporate completely before adding the next and don't rush the process!

After all of the butter has been added, add the vanilla and turn the speed back to high. Whip for about 3 minutes or until the buttercream comes together. Turn the speed down to low and add the cream cheese, then mix on medium to fully incorporate.

So make your own and you will have a good idea of what they look like.
